Recipe:
Ingredients:
– 2 cups Kodiak Cakes pancake and waffle mix
– 1/2 cup unsweetened applesauce
– 1/2 cup almond milk
– 1/4 cup honey
– 2 eggs
– 1 tsp vanilla extract
– 1 cup fresh blueberries
Instructions:
1. Preheat your oven to 350°F.
2. In a mixing bowl, combine the Kodiak Cakes mix, applesauce, almond milk, honey, eggs, and vanilla extract.
3. Mix well until the batter is smooth.
4. Gently fold in the blueberries.
5. Line a muffin tin with paper liners.

7. Bake for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
8. Let the muffins cool for a few minutes before removing them from the muffin tin.
