Oh but I have a great recipe for y’all today. You all know that I love a quick meal and seafood is my favorite. Pair those two together and WAHLAAA!!!! Let’s jump right into it.
INGREDIENTS
1 Lb Salmon Fillet
1 Tsp Cajun Blackened Seasoning (Cajun’s Choice Brand)
1 Tsp Minced Garlic
1/2 Lemon squeezed & 2 slices cut in half
3 Tbsp Butter
1 Tbsp Rosemary
1 Tsp Lemon Pepper Seasoning (Gourmet Collection Brand)
Panko Crumbs (Progresso Brand)
Steam-able Frozen Leaf Spinach
Sea Salt
Colby Jack Cheese
Basting Brush
Foil
DIRECTIONS
Melt butter. Place foil inside pan long enough to cover length of salmon. Use basting brush to lightly coat foil inside pan. Combine remaining butter, rosemary, minced garlic, and lemon juice in a bow and set aside. Place salmon fillet on foil inside pan and baste with butter combination. Lightly sprinkle blackened and lemon pepper seasoning on top and place halves of lemon a few inches apart across salmon. Cover with foil and bake for 27 minutes on 400 degrees.
Microwave steam-able spinach. When done combine 2 tbsp, of the juice from inside the pan of salmon, to spinach and season with sea salt. Plate food and sprinkle with cheese and panko crumbs to your liking. Now it is time to eat.
