I hope you all have had a great week thus far. I know how hectic the beginning of the month can be with setting new goals and creating your schedule. I wanted to share my latest recipe with you all. It has been quite sometime since I have cooked a hen and I was in much need of something other than chicken and seafood this week. I decided to head to my local Kroger to pick up groceries for a delectable dinner. So let’s dive right into it.
INGREDIENTS
2 Cornish Hen
Rosemary, Thyme, Italian Parsley Blend (4 springs each)
1-2 Tsp The Gourmet Collection Rosemary, Roasted Garlic, Sea Salt Seasoning
2 Tbsp Lemon Juice
1/4 c Butter
1-2 cup Chicken Broth
1 Tbsp Minced Garlic
1/2 Sliced Onion
Cayenne Pepper
2 Tsp Olive Oil/Avocado Oil
Pan
Foil Paper
DIRECTIONS
Preheat oven to 450 degrees F. Cover roasting pan with foil and lightly coat with oil. Arrange hens in pan and rub each with 1 tsp olive oil or avocado oil. Stuff each hen with half of your ingredients: rosemary, thyme, parsley blend and butter. Next, divide onion in half and add to each hen with 1 tsp garlic. Add 1 tbsp of lemon juice inside each hen. Season lightly with The Gourmet Collection seasoning and cayenne. Pour chick broth at bottom of pan. Roast for 50 minutes basting with juice every 10 minutes. Reduce oven temperature to 350 degrees F and cook for 10-20 minutes until hens are golden brown. Once done, cut hands in half lengthwise and serve.
